First crack: useful, audible, imperfect

First crack is a series of pops produced as roasting coffee expands and releases internal pressure. For many home roasters, it is the easiest event to notice without instruments and a useful moment to record.

It is not a universal alarm clock. Some coffees crack loudly; others are subdued. Machine noise, batch size, processing, moisture, and the observer affect what gets recorded as the start.

What is happening

Roasting drives off water and creates gases while the cellular structure becomes more porous. Pressure rises; structural changes and the release of vapour and gases produce audible fractures, expansion, and chaff loss.

About 196°C / 385°F is often quoted, but it is not a machine setting. Probe position, response, airflow, and batch size influence the display, and beans do not crack simultaneously. The popular description of first crack as a clean switch from endothermic to exothermic is also too simple; measured heat and mass transfer show a more complicated transition.

Learn your machine's sound

First crack is often hollow and popcorn-like; second crack is commonly finer and quicker. Choose a consistent convention, such as the first unmistakable cluster rather than one isolated pop. If it is quiet or spread out, record uncertainty instead of forcing precision.

Never disable required extraction to listen. Reduce unrelated noise and learn the likely window from repeated batches. Adjust process airflow only if the maker permits it and you understand its effect on the roast.

After first crack

Pay close attention and prepare to finish safely. A shorter continuation often leads lighter; continuing further generally adds roast character and approaches second crack. Thirty, ninety, or 120 seconds cannot guarantee a level across different machines.

Record crack, drop, and changes to heat or airflow. Development time can compare similar roasts, but 15 to 25 percent is a convention rather than a boundary between defective and good coffee.

Diagnose with the cup

A sparse crack can reflect low momentum, a large batch, uneven beans, quiet coffee, or poor audibility. An early energetic crack can accompany aggressive heat, but sound alone does not reveal internal development.

Record whether the crack was loud, quiet, clustered, or drawn out. Taste after a consistent rest with a consistent brew. First crack will not supply the answer; it gives you a shared point from which to describe the next change.
